I’m trying to add more vegetables into my life. It is good for my body. I recently completed a 10 day reset that included eating wholly plant based. It was definitely difficult because I’m used to eating quite a bit of meat. As part of this goal, I have been shopping at my local farmers market. This week I only spent $14 and am going to track how long I can stretch that out.
Already in my kitchen – radishes, carrots, shishito peppers, red onion, yellow onion, bacon, and frozen meats.
Farmer’s Market haul – eggplant, sweet peppers, cherry tomatoes, cucumbers, arugula, and green beans.
Here are the meals I got out of this week:
Blistered shishito peppers
We recently got an air fryer and these could not be easier to make. You just toss in a bit of oil and throw them in the air fryer for 6-7 minutes at 390 degrees. I made them two different ways on two separate days.


Eggplant Parm Bites
Recipe #24 for the year was found here. These were also pretty easy to make. I cut the eggplant into cube pieces, dipped them into an egg sauce, then a flour mix then fried in some olive oil. Simple marinara sauce as the dipping sauce.

Salads
I start with some kind of lettuce and add all the toppings that I want. This one’s topping included red onion, cucumber, sweet peppers, carrots, pistachios, almonds, pretzel chips, green goddess dressing and ranch dressing.

Eggplant Pizza
I made this in the air fryer. It was surprisingly tasty. Recipe #25 for the year was found here! The basil is from my friend’s apartment patio garden. A great easy healthy version of pizza.

Cucumber caprese salad
All local produce. I went to the Farmer’s Market again and got $6 mozzarella cheese. The basil was from a friend and the tomatoes and cucumbers were also from the Farmer’s Market.

Shrimp fajita tacos
Frozen cooked shrimp from Costco. All I had to do was throw the shrimp in with the onions and peppers to get some seasoning on them and warm them up. The creamy drizzled sauce was a mix of sour cream and Ernie’s Kick Sauce.

Shrimp quesadilla
I still had some shrimp, onions and peppers left over from my fajitas so I turned that into a quesadilla. Then I topped it with sour cream and arugula.

English muffin pizza
Toppings included local mozzarella, marinara sauce, bacon, red onion, and basil.

Eggplant chocolate cake
It actually tasted better than it looks. The texture came out more like a brownie than a cake. I added some ice cream to balance the intensity of the dark chocolate. I found recipe #26 for the year here. It was a good way to use the rest of the eggplant that I had and practice baking. I’m much better at cooking where the steps are not as precise.


Cucumber sandwich and green beans
So refreshing. The cucumber sandwich had pesto, arugula, garden vegetable cream cheese and cucumbers. Air fryer

Knockoff Crunchwrap Supreme in the Air Fryer
I had some ground beef in the freezer that I defrosted for this. Recipe #27 for the year was found on Pinterest and the recipe is here. The contents included ground beef, cheese, cherry tomatoes, peppers, onions, hot sauce and tortilla chips. After crisping in the air fryer, I topped with sour cream and avocado. Will def make again! I kind of overfilled it and it didn’t quite close but it was still very good!

Next week I’m trying to eat through the freezer of random things. I’m also going to wander around Costco to see what I find and will probably grab a slice of pizza or chicken bake from the food court. Cheers!
